Pavlova With Mandarins and Dates INGREDIENTS
- 6 Medjool dates

TOPPING
- 3 oranges
- 6 mandarins
- 1 lime
- Mint
FRENCH MERINGUE
- 2 egg whites
- 100 g of granulated sugar
MASCARPONE WHIPPED CREAM
- 100 g of 30% liquid cream
- 50 g of mascarpone
- 1 packet of vanilla sugar
- 25 g of granulated sugar
PREPARATION
MERINGUE:
Whisk the egg whites until stiff peaks form, gradually adding the sugar. Spread the meringue roughly on a sheet of parchment paper to a thickness of about 1 cm. Bake at 130°C (265°F) for 30 minutes, then reduce the temperature to 80°C (175°F) and bake for another 30 minutes.
MASCARPONE WHIPPED CREAM:
Whip all the ingredients together until you obtain a whipped cream. Peel and segment the oranges and mandarins. Cut the Medjool dates into thin quarters.
ASSEMBLY:
In 6 small glasses, create a deconstructed layering by alternating citrus segments, pieces of meringue, whipped cream, and dates. Finish by zesting a lime over the glasses and garnishing with a sprig of mint.
Serve very cold.
